The disc for cooking, supplied with your "Disc-It" is a tool that has been used for many generations in numerous cultures ranging from the orient to the southwest for preparing any type of meal your hunger desires.

This "Disc" is often referred to as many different names around the world.

A "wok" is of Asian origin and is commonly found being used in cooking infinite oriental recipes.

In the Southwest, the disc is commonly referred to as a "Disco" or a "Discada". Typically this was constructed from an old, used, tractor plow disc which had the center hole welded closed and had horseshoes welded to it to use as handles.

Why a tractor disc?

The disc was light weight, easy to transport and in some areas - readily available.

When seasoned correctly, the Disc, virtually a non-stick pan can cook almost any type of food with little cleanup.

What is the Disc made of?

The Disc supplied with the "Disc-It" product is made from 1/8" Mild Steel. The Steel is cut and stamped to form the desired shape.

Why is my disc gray in color when I get it new?

  • Unlike other disc providers, we sandblast the disc to remove scale from the steel.
  • High Pressure sandblasting removes all of the surface impurities.
  • Removing these impurities also provides the best possible, smoothest surface which will greatly impact the seasoned finish of your disc.

What is applied to my disc surface to protect it until my first use?

After your disc has been sandblasted and the handles welded on, we apply a light coat of vegetable oil to keep the surface from rusting.

Will my disc rust?

Absolutely! Even when seasoned correctly, if it is exposed to the weather, it will rust (it is steel). The best way to protect your disc it to maintain a light coat of vegetable oil or canola or the cooking oil of your preference.

If my disc rusts, can it be saved?

Absolutely. Of course the method of re-seasoning the disc will vary depending on the level of rust. In some cases, you can clean the product using a wire brush or stiff scratch pad to remove the rust and re-season it. In worse situations, it might be best to have the disc sandblasted and then start over.

Are the handles on my disc coated with anything?

Negative - because this is a surface very close to food, we do not apply nor recommend paint on the handles of the disc. We recommend applying vegetable or other cooking oil on these as well.

The Disc supplied with the Disc-It is very similar to mild steel woks and cast iron skillets, cast iron dutch-ovens and cast iron pans.

Steel and cast iron have pores just like your skin does. These pores will absorb the oils and flavors of what is used in them.

A very common comment regarding discs or cast iron cookware is "The more you use it, the better the food tastes". We agree.

Seasoning your disc or wok or cast iron skillet is necessary to provide a non-stick type cooking surface. Without seasoning the surface, your food will stick to the steel.

There are thousands of opinions on how to properly season your disc or wok.

Here are our thoughts on the subject.

Start by cleaning your disc.

Some people believe that washing your disc with soap and water will not affect the disc. We disagree. Steel and cast iron has pores in it. These pores absorb oils and flavors from whatever is in it. Unless you prefer a faint taste of soap in your food - DO NOT USE SOAP. It will be noticeable in the flavor of your food. Heating your disc prior to use will sanitize your disc.

The Disc that you received with your Disc-It has been sandblasted to remove impurities from the surface of the steel and then it is coated with vegetable oil to protect it from rusting.

Seasoning - Method ´A´

Using the Disc-it with the Disc properly set on the burner, ignite the burner and bring the disc to a high heat. As the disc is heating up, continuously apply your choice of cooking oil such as vegetable oil or peanut oil etc. by using paper-towels or a kitchen towel of some sort. Use caution when wiping the oil on the surface as it will be hot!

Allow the disc to cool, re-apply the oil and slowly heat the disc up to a high heat temperature while wiping the disc cooking surface again.

Continue to heat and cool the disc while applying vegetable (or other cooking oil) until you have a thoroughly smooth coated surface. A well seasoned disc will have a dark black appearance.

Seasoning Method ´B´

Sautee Onions! Most people love the smell of onions (even if they do not like onions). Turn the burner on low and add about ΒΌ cup of the cooking oil of your choice. Slowly bring the oil temperature up to medium heat and add dices or sliced onions. Use caution as onions hold lots of water and may splash hot oil as you add them into the oil. As the onions cook, slowly drag them from the bottom center of the disc up to the outer sides of the disc. This will allow the oils to run down from the outer edge back into the middle and coat the disc fully.

Turn the burner off and allow to cool while continuing to drag the oil up towards the outer edge of the disc and run back down the center.

After the oil has cooled, remove the oil and onions from the disc and dispose of them, Wipe the entire cooking surface of the disc with a light coat of cooking oil and ignite the burner and turn it on low.

Repeat the previous steps with oil and onions until your disc is well coated with a dark brown/black surface.

Seasoning Method ´C´

Bacon, bacon, bacon!

Turn the burner on low and put a full package of bacon in the disc. Make sure that you do not use lean bacon as the fat of the bacon will serve as your cooking oil. Do not turn this method on high heat as it will burn the bacon to the surface and hurt the seasoning method. Make sure you constantly stir the cooking bacon and continuously drag the bacon and grease up to the outer part of the disc to coat the disc completely.

  • Turn off the burner and allow to cool.
  • Dispose of the bacon and the oil.
  • Repeat until desired seasoned surface is acquired.

There are many opinions on what type of utensils that can be used when cooking on a disc or a wok.

Some people will only use wooden utensils, others only plastic.

You can use metal, wood or plastic utensils on the disc surface as long as you not scratch or damage the seasoned surface.

How do I clean the disc after each use?

Do not cook on a temperature higher than absolutely necessary! You will burn the food onto the cooking surface and ruin the seasoned finish on the disc!

(I still have not yet learned this either!)

The amount of cleaning required is greatly affected by the food you have prepared and how you prepared it.

It is always best to clean the disc right after you are done cooking. (Use caution if it still hot to avoid burns).

Wipe any resident food and oil from the disc.

Using a small amount of oil, a little bit of heat and a few tablespoons of salt, scrub away any stubborn food with a towel or papertowel. USE CAUTION AS THE OIL AND SURFACE MAY BE HOT!

You may also use a stiff scotch brite pad for scrubbing if necessary but be cautious not to scrub away the coating of the seasoning that you have worked to achieve!

After the disc has been cleaned, apply a thin coat of cooking oil to the disc to further protect the surface.

How do I store the disc after use?

After the disc and burner have been completely cooled, you can store the disc a couple of different ways (depending on the humidity in your area).

You can store the disc inside out of the weather and moisture.

You can turn the disc upside down on top of the burner and then cover the disc with a Disc-It cover available in the "accessories section" of the web-site www.disc-it.com.

How do I light the burner?

The burner is equipped with a flame igniter. To light the burner, gently push the knob in and slowly rotate the knob counter-clock wise until you hear a "click". The flame should immediately ignite in the burner ring. If it does not immediately ignite, retry by turning the knob slower. This will allow more propane gas to flow through the burner and become easier to ignite.

** Caution ** be careful not allow too much propane to flow into the burner before igniting to avoid a "flash" of the propane ignition.

How do I adjust the flame of burner?

The burner is designed to adjust from a small "simmer" flame to a "high heat" flame. Slowly rotating the knob will adjust the flame as needed.

How do I adjust the gas and oxygen mixture of the burner?

Each burner is tested before it leaves our factory for flame adjustment however it may require additional adjustment due to shipping or due to difference in altitude.

To adjust the air/gas ratio to the burner, there are 2 brass adjustment knobs located on the burner. Those knobs are located behind the flame adjustment/igniter knob on the underside of the burner. Rotating these brass wheels will allow more or less oxygen to enter the body of the burner for fuel mixture. With the disc removed from the burner, ignite the burner and visually inspect the flame. Rotate the brass wheels as necessary until you acquire the desired flame.

What is the normal shipment time after I place my order for a Disc-It?

Shipment on a standard design shipment can be expected within 2-3 weeks after receipt of order and verification of shipment address.

What is the normal shipment for a custom ordered Disc-It?

For custom designed Disc-It, please allow 3-4 weeks for shipments.

Can I order "any" design of Disc-It that I want?

Yes and No.

Almost all special design requests can be accommodated.

Almost any design that is not a copyrighted or trademarked image can be incorporated into the design of the Disc-It.

Some custom design may not fit into the space provided or may not have the required detail to properly express the desired image.

Is there an additional charge for my custom Disc-it design request?

Only designs that are not considered to be offered in our full product line will have an additional charge.

Some examples of designs that would incur additional charges are:

  • Company logos (show picture of bar None design)
  • Personal Silhouettes
  • Designs that will not or could not be sold to another customer.

How do I find out if my custom Disc-It design request will require an additional charge and what that charge might be?

Can I order customized handles for the disc?

Yes. For an additional charge, we can manufacture special disc handles for your disc. E-mail us for a quotation.

Standard fees for custom handles are $50 per set. Price may differ pending the request of handles desires
